Easy citation of Nextcloud manuals

Github could help us ease the citation of our manuals for people who cite our docs in their scientific paper: https://docs.github.com/en/repositories/managing-your-repositorys-settings-and-features/customizing-your-repository/about-citation-files

Challenges

• We have three manuals in one repo
• We can probably not list the real authors because
  • Changes constantly and goes out of sync
  • The list of authors would be very long

Something general like The Nextcloud Authors or The Nextcloud Community might work for the authors field. We probably need an AUTHORS file though (like in nextcloud/server).
