Set default serializers

The current situation where any registered serialiser is fair game when the user hasn't selected one or more seems nice, but especially for requests from web browsers prefer `text/html` whereas most plumber apis would rather hand over `application/json` if nothing more specific has been requested...

On the other hand, maybe it is fine to just return html to a browser client..?
