I like the ease of use for this squid setup with ssl-bump, just needs to be updated to use the latest certs , particularly to replace the letsencrypt expired cert. See https://letsencrypt.org/docs/dst-root-ca-x3-expiration-september-2021/#:~:text=DST%20Root%20CA%20X3%20will,that%20use%20Let's%20Encrypt%20certificates.
I updated the squid version and openssl since they seem to be a dependency for the latest alpine versions. There are some config and squid util changes needed to make them work.
