Refactor and centralize RPC specifications under protocol/rpc/ #736

Moved all RPC-related specifications into a new protocol/rpc/ directory for better organization and clarity.
Created dedicated files for each RPC namespace:
- rpc-supervisor.md (from interop/supervisor.md)
- rpc-interop.md (from interop/managed-node.md)
- rpc-optimism.md (L2 Output RPC from protocol/rollup-node.md)
- rpc-engine.md (Engine API from protocol/exec-engine.md)
Added clear move notices in the original files/sections pointing to the new locations.
Updated SUMMARY.md to include a new RPC section with links to all new RPC specs.
